February is for Extra LOVE

February arrived! and for me and my family it was all hearts and sweets ❤ I wish! LOL! But it is a good excuse to bake and share some good cooking love. 

I decided on baking cakes for my kid's school friends, but the egg allergies came along with one of Mila's good friend! So it was time to try the eggless cake recipe and off course I like to make the kids try different things so we went of a healthy topping instead of the cream (which I know they rather have..)

 To be honest, this was the hardest video to make yet! My kids where acting out in a  very clownish way! Isaac only wanted to make fun of her sister and Mila was in a diva/comedian mood! Not very good for cooking; at least they wanted to keep going! 

GOOFYING    Btw please don't think I'm the pushy mother kind, they really enjoy cooking and love to be in front of the camera! They are YouTube ready! hahaha. 

 

Enough said! Back to cooking! As always, my advice on cooking is to {Enjoy}.

Tip: Substitute ingredients with your favorites ones or with what you have on hand, for example most of the time you will be able to replace apples with pears, Spinach with kale, walnuts for almonds and so on. 

 

For the eggless cake recipe you will need:

 INGREDIENTS 

  • 400 g Flour or 3/4 Cups
  • 200 g Sugar or 1 Cup
  • 2 Tsp Baking Powder
  • 130 g Margarine or 1 Cup of Oil
  • 1 Tsp Vainilla 
  • 1 1/2 Cups - 2 Milk dairy or non-dairy

INSTRUCTIONS

  1. Preheat your oven to 350 F (175 C)
  2. Put Flour, Sugar and baking powder in a bowl. Mix very well. 
  3. Add Margarine (or oil), Milk and vainilla. Mix until combine.
  4. Transfer into an oiled pan and flour baking pan or silicone pan. Bake until cake springs back when touched, or until toothpick inserted in cake comer clean. 

For the Toppings

  • 1 diced apple
  • 1 cup of raisins (you can replace it with cranberries
  • 1 Tsp of pur superfoods Chia seeds 
  • 1/2 cup of oats 
  • 2 Tsp of honey 
  • 2 Tsp of coconut Oil 

 Eggless cakeMix everything in a pan. Into the oven at 350 F for 10-15 Minutes or until golden.

Top your cake with this and maybe add a scoop of ice cream for some extra LOVE!
